I don’t know about anyone else, but when it gets cold I really up the spices in my food where possible, breakfast is no exception, so I’ve whipped up these soft, moist, apple pie pancakes with warming cinnamon and ginger.
These are so easy to make, you just throw all the ingredients into a blender then fry them up!
Another bonus is that they don’t require any special flour, just bog standard oats (use certified gluten free as needed).

Recipe (serves 1)
1 apple
1 medium egg
60ml (¼ cup) milk of choice
½ tsp cinnamon
¼ tsp ginger
½ tsp baking powder
50g (½ cup) oats
optional toppings: ½ apple chopped & sauteed/drizzle honey/fruit/almond butter
Directions
1-If serving your pancakes with more apple then chop it up first and gently saute it in a little bit of oil while you get the rest of the recipe made then set it aside while you cook the pancakes
2-Add the egg, milk and chopped apple to a blender and quickly blend for 5 seconds then stop the blender and add in the dry ingredients and blend again until everything is combined in a thick batter
3-Lightly oil and heat a pan to a medium heat then dollop on the mixture into pancake shapes and cook until bubbles start to appear on the top (roughly 1-2 mins) then flip over to cook the other side
4-Repeat until the mix has been used up then serve up with your desired toppings and a sprinkle more of cinnamon
